Acetylated wheat starch
(Fidekol sas)

Fidekol sas is modified wheat starch, esterified starch, E 1420.
Fidekol sas is obtained by the process of liquid (wet) esterification of wheat starch, with the use of appropriate acids as esterification agents and precise pH value regulation.
The product is a white powder with a characteristic odor and flavor.

Usage: Fidekol sas increases resistance to retrogradation and aging, provides better stability during freezing and thawing of food, has a lower gelatinization temperature, increases transparency and gloss of gels, improves water retention capacity, reduces viscosity compared to native starch, provides better compatibility with other ingredients, which is why it is widely used in the food industry.
